While Ashley starts as a simple Saison, careful aging in French Oak Pinot Noir barrels with apricots, our house microbes, and warm encouragement transform her into a tart, complex and delectable beer.
Created for our first anniversary, Appreciation is a barrel-aged farmhouse ale fermented with boysenberries and our resident funk. Appreciation’s first impression is its ruby red color, while its mouth-watering acidity, whiff of the barnyard, and fruit aromas and flavors make you crave another sip.
831 is a classic example of the modern American India Pale Ale. A simple malt bill provides a showcase for bold, citrus, dank hop flavors and enticing aromas. Each sip is clean and dry allowing for the pure expression of American grown hops including Magnum, Columbus, and Citra. Unabashedly aggressive and yet satisfying. 831 is our ode to the brash grace and herbal beauty of humulus lupulus.
Our interpretation of a Belgian farmhouse ale, Anais is made from select Pilsner, barley, wheat and spelt malts and hopped with an American-grown hybrid of European ancestry. Dry, fruity, and lightly acidic, Anais is our house Saison and the base of many of our other barreled, blended, and aged varietals.
A brewer’s beer for sure, Chavez is an exercise in simplicity and tradition. This decidedly American Robust Porter is full of warm chocolate notes both in flavor and aroma. What starts slightly bitter, sweet and silky, ends dry and memorable. Medium-bodied, satisfying, and coffee black, Chavez plants its foot firmly in the area just shy of the roast-dominate world of Stout. Our go-to beer in the brew house.
